Christmas Special-Spiced Chocolate Kahlúa Eggnog


Christmas is just few days away and like in our house I would guess everyone is getting ready for the festive day. It is just that fun time of the year with snow outside. There are gifts, candles, lights, warm spices, Christmas tree and of course delicious food and lots of it.



In our family my husband usually prepares the traditional Finnish Christmas dinner and I usually make few Indian dishes, which are light and complements the other food. So, I will be making chaat and rice dish to go with the main food this time.


The egg nog cocktail recipe I am sharing today will also be on the menu for this Christmas. I tried this recipe a while ago and it tasted awesome. It is spiced with cinnamon, cloves and nutmeg and dash of Kahlúa and little bit of chocolate, who doesn’t love chocolate. It gives such nice, warm Christmassy feeling….


So, here is the recipe


Ingredients

300 ml milk

150 ml cream

40g sugar

1 cinamom stick

¼ tsp nutmeg

4-5 cloves

1 tsp unsweetned cacao powder

1 tsp cornflour

3 egg yolks

2 tbsp kahlúa


Method

Place the egg yolks, cornflour and sugar in a bowl. Using a whisk beat until pale. Set aside.


Place the milk and cream in a pot with roughly crushed spices and bring it to boil over medium heat. As soon as it starts to boil slowly add half of warm milk and cream mixture over the beaten eggs, adding one ladle at a time, while whisking it continuously. Pour it back into the remaining milk-cream mixture and place over low heat. Stirring it constantly cook the mixture until it reaches 80C, and coats the back of the ladle.


Add in the cocoa powder through a sieve and mix it well. Strain it through a sieve. Let it cool down a bit; it should be lukewarm. Add in the kahlúa and mix.


Pour it in serving glasses and enjoy!!
